In case you didn't realize it, P.F. Chang's isn't really authentic Chinese food. "P.F."stands for Paul Fleming. And the chain was founded in Scottsdale, Arizona.
Which is why this is crazy: They just debuted their first location in CHINA. A P.F.Chang's is now open in Shanghai, and even the CEO admits it's kind of weird that they're in that market.
But . . . he says it's because they've got a niche. Chinese people look at it as American food, and, quote, "They love that it's an American bistro, serving American dishes for an American-style palette."
